Quick and Easy Summer Fish Recipes

Summer is the right time for surf fishing and it’s great to be able to cook up those fresh fish quickly for a nice seafood meal. Here are quick and easy recipes for pompano, sea mullet (also called whiting) and flounder.

Broiled Pompano in Lemon Butter

1 lb pompano fillets
2 tablespoons butter, melted
1⁄2 lemon, juiced
1⁄4 tsp salt
dash pepper
1⁄2 lemon, sliced
fresh parsley

Butter a glass baking dish and arrange pompano fillets in the dish. Combine the lemon, butter, salt and pepper and drizzle over the fish; reserve some for use when serving. Broil on highest rack for 8-10 minutes or until fish flakes easily. Garnish with lemon slices and parsley. Serves 4.

 

Beer Battered Sea Mullet

6 whole sea mullet (whiting), dressed
½ cup butter, melted
½ cup beer
2 eggs
1 cup flour
½ cup cornstarch
vegetable oil

Beat egg yokes and mix with butter and beer. Stir in flour and cornstarch. Beat eggs and add to mixture. Heat oil on med high in fryer or pan. Dip each fish in batter and coat well. Fry until golden brown. Drain on paper towels and serve with hushpuppies and slaw. Serves 2, increase recipe amounts for more fish.

Beachfront Baked Flounder

2 lbs flounder fillets
1 small onion, chopped
6 tablespoons butter or margarine
2 tablespoons lemon juice
1/8 teaspoon thyme
dash parsley and salt

Preheat oven to 350 degrees. Melt butter and pour into shallow baking dish. Put fillets in butter, add lemon juice and thyme, and put onions around the side. Bake 20 minutes, add a dash of parsley and salt over top with 4 minutes left. Pour juices over fillets before serving. Serves 4-5.
